Cork & Table is the second restaurant operated by Chef/Owner James Fallon after helming the Northern Neck Gourmet in Warsaw, Virginia from 2007 to 2014. It was in Warsaw that he developed his unique approach to serving fresh, seasonal food and interesting wine selections in a casual, accessible setting. He believes he has found in Old Town Fredericksburg, the perfect location for his new venture; one that combines a healthy respect for tradition with a forward thinking approach to sustainable and community-based business practices. Prior to operating his Cafe in Warsaw, James trained under many of the finest chefs and restaurateurs in New York City and Washington DC. He graduated from the Culinary Institute of America in Hyde Park, New York in 1993 and was certified as a sommelier by the Washington Sommelier Society in 1991.
